Ingredients (for about 6 to 8 pieces)
2 eggs (size M)
140g emmer flour
10g sunflower oil
pinch of salt
Cheese, peppers, spring onions
Banana, strawberry jam, cinnamon
Custard: 300ml milk, vanilla pod, 3 tsp cornstarch, 2tbsp sugar
Mix the eggs well together with salt and milk.
Then add emmer flour in several small portions while constantly whisking.
Let the dough rest for about 10 minutes. In the meantime prepare the fillings.
Cut the peppers and spring onions into small pieces and roast gently in a pan.
Add the grated cheese and roll the filling into the pancakes.
Cut the banana and mix with the strawberry jam.
For the custard boil the milk and add half a vanilla pod. When it is boiling add the sugar. Dissolve the cornstarch in a little bit of cold water and add it to the boiling milk while stirring continuously until the custard is thick. Fill the pancakes with the banana strawberry mixture, cover with custard and sprinkle with cinnamon.
