Easy Rich Butter Shortbread


170 gm butter
75 gm caster sugar
1 teaspoon vanilla extract
250 gm plain flour

Pre-heat oven 170'C/fan 150'C, gas 3
1) put all ingredients in bowl/blender, blend until dough is formed
2) without overworking dough, roll out on floured board until 2.5 cm thick
3) press out chosen shape and put on baking tray lined with parchment paper
4) bake 10-15 mins, till turning golden
5) take out of oven, allow to cool for 5 mins before carefully placing on wire racks
