Easy and quick chocolate cake

Ingredients

350g white spelt flour( or you can use half white and half wholemeal)

150g sugar

250ml milk

200ml oil ( I like grapesed oil) or melted butter

1 tsp baking powder

1 tsp bicarbonate of soda

3 tbsp of cocoa

3 tbsp jam

1 tsp vanilla extract

some spices if you like-around 2tsp mix of cinnamon,cloves, ginger.

Method

Preheat your oven to 150-160°C.

In a bowl beat sugar with an egg and than gradually add the other ingredients ( milk, oil,vanilla, flour with powders and spices). Mix them well and in the end add jam.

Butter a baking dish ( I use 20cm /30cm dish) and pour the dough. Bake around 45-50 minutes or until a skewer inserted into the centre of the cake comes out clean.

Allow to cool.

I like to melt dark chocolate with 2-3 spoons of milk, spread it over the cake and sprinkle some dessicated coconut.
