Ingredients
150g Shiptons organic white flour
50g butter
50g sugar (any type, add more if necessary, this isn't a super-sweet recipe)
A decent glug of olive oil
Milk or greek yoghurt to bind
3tbs cocoa powder (sweetened or unsweetened)
One large courgette, grated into the bowl to catch the liquid
1 tsp baking powder
Pinch of salt
Method
Preheat oven to 200, fan 190. Mix everything together in a large bowl, combine really well and tweak for sweetness, chocolately-ness or liquidy-ness. This is a marvellously forgiving recipe that I concocted to make with my children, so it's capable of tasting good, no matter how many (clean) little hands have added this and that!
Splodge out into an oiled oven dish (similar to a lasagne dish), pebbledash with chocolate buttons if you have some and bake until cooked through, with a little bit 'bounce' on top. Cool, sprinkle with icing sugar and cut into squares.
