Chocolate Chip Cookies

113g butter, melted
1 egg
1 tsp vanilla extract
165g demerara sugar
150g plain flour
1/2 tsp baking soda
1/2 tsp salt
170g chocolate chips or chunks


  • Preheat oven to 190c / 170c fan
  • In a large bowl, beat together the melted butter, egg, vanilla extract and sugar
  • In a separate bowl, mix the flour, baking soda and salt
  • Add the dry and wet ingredients toether, stir well to combine
  • Slowly add chocolate until well combined
  • Use a small cookie dough/ice cream scoop (a teaspoon works too) to place the cookie dough on a baking sheet lined with parchment paper making sure to leave room for them to spread (1.5"-2")
  • Bake for 10 minutes

Makes 24 cookies
