Ingredients
3/4 cup porridge oats
1 cup of wholemeal flour
1/4 cup demerara, brown or rapadura sugar
2 heaped tablespoons cocoa powder
2 teaspoons baking powder
1/2 teaspoon bicarbonate of soda
1/2 teaspoon salt
1 heaped teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon mixed spice
3/4 cup buttermilk or natural, unsweetened yoghurt
2 1/2 cup mashed, ripe bananas
1/4 cup maple syrup or honey
2 eggs
1/2 cup chocolate chips
Topping
25-30gm chopped walnuts
Method
Preheat oven to 180C.
Mix all dry ingredients in a bowl.
Mix all wet ingredients in a separate bowl.
Add wet to dry ingredients, mix and lastly fold in chocolate chips.
Pour into greased and lined loaf tin. Sprinkle with chopped walnuts.
Bake at 180C for a minimum of 50 minutes. Check after 45 minutes using a skewer and, if it looks like it's burning on top but still raw inside, cover with a piece of baking parcment and keep cooking till skewer comes out clean when inserted.
