I recently discovered the Shipton Mill 5 Seed Blend, I love it as it transforms standard white flour into a superb granary style loaf and saves me having to store two big sacks of flour. This recipe makes three medium sized loaves:
Ingredients
1kg Organic White No. 4 Four
200g Wholemeal Flour
100g Dark Rye
250g 5 Seed Blend
35g Salt
500g Soughdough starter
1 tsp dried yeast
1 litre of water (approx)
Method
I kneed for 10 minutes, allow a few hours for proving, shape into three rounds, rest for 40 minutes then bake on the floor of the Aga for 35 minutes (per loaf)
