Breakfast Soda Bread

Best mixed in stand mixer


200gms wholemeal bread flour

200gms white bread flour

1 tsp cream of tatar

1 tsp bicarb of soda

1 tsp ground cinnamon spice

125 gms soft light brown sugar

1/2 tsp salt

1 large egg lightly beaten

225 ml Milk

50 gms unsalted butter (melted and cooled)

75 gms chopped walnuts

150 gms rough chopped dried apricots or dates


Heat oven to 150°C

Grease 750 gms non-stick loaf tin (or line with parchment paper if not non-stick)

Mix all dry indredients thoroughly
