260g lukewarm water

80g starter

8g salt

Method

1h autolise

2.5h stretch and fold (every 30min)

1h bench rest

7h fridge prove

bake in iron cast 220 degrees Celsius for 25min, take lid of and bake for 15min at 200 degrees , turn bread upside down for 5min.
