125g grated raw beetroot
125g grated raw carrot
146g dark sugar
250ml sunflower oil or similar (not olive oil)
200g SR flour
3 Eggs
1tsp cinnamon (2.5g) - 1 tsp ground nutmeg (2.5g)
100g chopped mixed nuts or not so mixed (dessicated coconut and/or cashew nuts work very well)
100g. Raisins
Beat together sugar eggs and oil for two minutes
Mix together flour cinnamon nutmeg then add carrots, beetroot, raisins and nuts
Fold INTO liquid mixture
Enough for two 1lb lined loaf tins or one 23cm cake tin. in loaf tins usually takes exactly one hour
Cook 45 mins to 1 hour in fan oven 150degs.
