Arepas with chicken and avocado (Reina Pepiada)

1 cup (Shipton’s) Organic maize flour
½ tsp baking soda
2 tbsp butter, melted
½ cup grated cheese
1 egg beaten
1 cup plain yogurt

½ tsp cumin seed
½ tsp chilli powder (optional)
1 tbsp chopped fresh coriander
Mix the ingredients in a bowl, adding each in the order above.
Stir until smooth.
Oil about 4 muffin tins and divide the mixture between the tins. Pre-heat the oven to 200 deg C or gas mark 6. Bake for about 20minutes. Serve as an accompaniment to your main or slice and place a small amount of chicken, avocado and mayo mix into the arepas to create a ‘sandwich’ usually called a Reina Pepiade in S. America.
