Apple Scones


650g Plain Flour
100g Caster Sugar
20g Baking Powder
125g Cold butter, cubed

1 Large apple, diced
2 Eggs (+ 1 extra egg)

300ml Buttermilk

Pinch of Salt

Cinnamon, ground
2-3 Tsp Vanilla Extract

Flaked almonds
Fresh berries

Icing sugar


Mix all ingredients in a bowl. Do not knead too well. The dough must be crumbly.
Roll out the dough to a thickness of around one inch (2-3cm).
Cut a round shape and put on baking tray using a 5-7 cm cutter (depending on how large you want them, I am using 6cm)
Brush top with beaten egg (avoid the sides!)
Make a small indenture on the top and add some fresh raspberries and/or blueberries. Top with flaked almonds
Bake 16-18 min at 200 C.
Dust with icing sugar.

You can replace the apple (and the cinnamon) with raisins, if preferred.
