All Butter Sultana & Raisin Cookies

Ingredients

125g golden caster sugar

95g unsalted butter

180g Plain Flour

1/2 tsp baking powder

1/4tsp salt

10ml milk

40g sultanas

40g raisins

Method

Preheat oven to 170 celsius (for fan oven).

Cream the butter and sugar (best in a stand mixer). Sift together the flour, baking powder and salt, add half to the butter mix. Mix until just combined. Add the rest of the flour, milk and dried fruit and mix until combined.

Divide the mixture into 15 and roll into balls (the mixture is quite crumbly so need to squish it well). Place on a lined baking tray and flatten each ball. Cook for 15-18 minutes in the preheated oven. Halfway through the cooking time sprinkle each cookie with a little extra caster sugar. They are ready when golden around the edges. Cool on cooling rack.
