These super light biscuits are so delicious you won't be able to resist eating them all!
200g caster sugar
1 tsp vanilla extract
100ml sunflower oil
1 tsp bicarbonate of soda
250g plain flour
Beat together the butter, sugar and vanilla extract. Gradually add the sunflower oil. Blend the flour with the bicarbonate of soda and stir into the butter mixture, you should have a fairly stiff dough. Take walnut sized pieces of dough and roll into a ball. Place on a greaseproof paper and flatten slightly.
Bake the biscuits in the centre of the oven on 150C for approximately 20 minutes.
