Perfect for hungry tummies after school - and with a mug of tea!
250g plain flour
3 tsp ground ginger
1 tsp mixed spice
1 tsp bicarbonate of soda
75g treacle (or molasses)
50g soft brown sugar
25g flaked almonds (optional)
Measure the dry ingredients and put in a large bowl.
Place the butter, treacle, syrup,& sugar in a saucepan and heat until the butter melts.
Add to the dry ingredient.
Add the eggs and milk.
It looks really runny, but don't worry it's right.
Pour the mixture into a cake tin - approx 20x20cm lined with baking parchment.
Bake at 160oC for about 40 mins.
