Lemon madeleines (24)

Traditional french madeleines, the best with a cup of tea.

Eggs : 3
Sugar : 140g
Sea Salt : 1 pinch
Honey : 1 tbsp
Oil : 1 tbps
T55 flour : 130g
Baking powder : 5g
Zest of 1 organic lemon
Melted butter : 130g
Milk : 50g


  1. Wisk together the eggs with the sugar and honey.
  2. Add the oil.
  3. Add the flour, baking powder, lemon zest and mix gently (you don't want the mix to be to aerated).
  4. Finally add the milk and cooled melted butter.
  5. Leave to rest in the fridge for a few hours, or best, one night.
  6. Preheat the oven at 180°/200°
  7. Grease generously a madeleine tin.
  8. Using a piping bag or a spoon, fill the tin, and be careful not more than half or the madeleines will spread and not rise.
  9. Bake until risen for app. 15 min.
  10. Take out of the tin immediatly.
