Ingredients
400g flour
½ pint water
Butter (optional)
Method
- Add the flour to a large bowl. Alternatively, a mixer can be used
- Add about half of the water to the bowl and mix with the flour to bring the dough together
- Knead the dough with the knuckles of your fingers
- Slowly add the rest of water until a smooth dough is formed
- Cover the dough with a damp towel for 30 minutes - 1 hour. This step is optional but recommended for a smooth dough
- After the dough has rested knead it again and divide it into 8 equal parts
- Switch on the gas to a medium flame under the tava
- Take one ball of dough and flatten it out using dried flour
- Roll it out to make a round roti shape
- Place the roti on the tava
- Let it cook on one side for a few seconds until bubbles are beginning to form. It is important that the underside of the roti does not get cooked too much, that you can see dark spots
- Using kitchen tongs turn the roti over on the tava.
- Cook the other side pressing it down with a clean tea towel.
- Finally for the puffing stage: use kitchen tongs to turn the roti over on the tava. Either press it down with a clean tea towel or place it directly over a flame to cook the underside of the roti
- Butter the roti (optional)
- Similarly follow steps 8-15 to make the rest of the rotis
