Cookery School’s aim is to take people back to honest, homely, delicious cooking. There is nothing cheffy or fancy about our food – we simply love sharing our ideas for delicious home-made food, using common utensils that can be found in most home kitchens. Our focus is on demystifying cooking, removing jargon and bringing back solid cooking skills, using high quality, primarily organic, sustainable ingredients.

There is always plenty of opportunity to ask questions to our cookery teachers and gain understanding of supposedly tricky techniques. Every session involves tasting all the food that has been made, further enhancing your ability to become a skilled home cook.

We offer a wide range of baking classes and courses, perfect for both beginner and advanced bakers.

The Ultimate Baking Course (four days intensive or eight weekly sessions)

Learn to bake with our comprehensive introduction to all things bread and baking! You’ll learn the key principles of cakes, croissants, breads, scones, pancakes, muffin, macarons and meringues, using this skills to create a wide range of baked goods.

From cinnamon buns and choux pastry to carrot cake and cheese and herb scones, you’ll finish the course with the confidence to knead, sift and decorate your way to success.

Advanced Baking Course

Want to take your baking skills to the next level? Our advanced baking course aims to develop and refine your technique, with sessions on hot water crust pastry, croissant/Danish dough, brioche dough, strudel pastry, filo pastry and advanced breads, cakes and biscuits.

The course is a mix of hands-on and interactive demonstration, ensuring you learn as much as you can. You’ll cover:

  • Shortcrust & hot water crust pastry
  • choux pastry
  • croquembouche (profiterole mountain) with spun sugar
  • puff pastry and Danish pastries
  • brioche
  • strudel & filo
  • fancy breads (pretzels, burger buns and tea cake)
  • cakes (Jaffa, Battenberg and dacquoise)
  • biscuits (Florentines, speculoos, brandy snaps, shortbread and jammy dodgers

 

Baking Classes (Day & Evening)

If a course is a little too long, we also offer a range of day and evening classes. Our classes are very informal and relaxed but well structured. Combining demonstration with hands-on baking, each of our classes aim to impart you with all the knowledge and techniques you need to continue your baking adventures at home.

Classes end with everyone sitting down around the Cookery School table to taste the food that has been cooked along with a glass of wine or coffee and tea. Classes include:
