Back in the day Stokies would pass half a dozen Oatcake Shops to buy from their favourite place. It's all about the texture, flavour "and 'em not being being too thick, duck". In homage to High Lane, Tunstall I now make these in exile at home in the Welsh hills on a cast iron planc usually used for Welsh Cakes.

A quick and easy granary loaf with a bit of Oatmeal and Barley thrown in (a bit of a using up stuff in the cupboard recipe) I use a bread machine to do all the grunt work, but it would be just us good made in a mixer with a dough hook or even made by hand.

I have always cooked porridge from rolled oats but after I read about the benefits of using pinhead oats, I decided to give it a go and IT IS SO MUCH NICER! We make ours with berries and honey and everyone loves it.
A lot of Medieval breads made use of oats, so for this soda bread, I've used oats in place of some of the flour. It is vegan friendly.

Cooking Oats for breakfast is a healthy alternative for many. Health Benefits: Pinhead Oats are nutritionally similar to other forms of oats. However pinhead Oats are different from quick or rolled Oats, in that the cooked pinhead oats release carbohydrates slowly into the bloodstream. While pinhead Oats take a bit longer to cook, their low glycemic index means that they do not cause any sharp increases in the blood sugar levels and you’ll stay full for a little while longer.

This traditional and delicious Porridge can be made using the organic pinhead oatmeal, a little sea salt and water. As you may know pinhead oatmeal has very thick, rough grains and the larger pinhead grains require a longer cooking time (even pre-soaking).

Despite the name this soft textured loaf isn’t actually sweet and goes very well with sharp cheese. It is wonderfully easy loaf to make with a limited knead technique but would, I think, adapt without fuss to your preferred style or a breadmaker.
Cranachan is a Scottish dessert which was originally made with crowdie cheese, oats, whisky, honey and fresh raspberries. More modern recipes have swapped the crowdie cheese for a simple whipped cream, although the recipe itself has remained much the same. Dessert is wonderful!
