Cranberry and Walnut Loaf by Martin PorterIngredients

Method

  1. Mix flour, salt, yeast and water then knead until you have a smooth dough
  2. Place in a covered bowl until doubled in size (approx 2 hours)
  3. Knock back to release air then add cranberries and walnuts
  4. Knead again ensuring cranberries and walnuts are evenly mixed through dough
  5. Heat oven to 240C (based on fan assisted electric oven)
  6. Shape as desired (I use a banneton) and leave covered to prove again for around 40mins
  7. Place on baking tray and place in oven
  8. After 10mins lower oven temp to 200C
  9. Bake for a further 30mins
  10. Remove from oven and check, you should hear a hollow sound when you tap the bottom of the loaf
  11. Place on cooling rack until fully cooled
  12. Enjoy
