Tomato and Basil Loaf

A light white bread perfect with soups or in a sandwich

For 2lb loaf

  • 575g bread flour
  • 1.5 tsp instant yeast
  • 3 tbsp tomato puree
  • 1 bunch of basil, chopped
  • 1 tsp salt
  • 1 tsp sugar
  • 3 tbsp olive oil
  • 290g water


This bread is of a wonderful light terracotta to pink colour which for me is one of few always coming out perfectly recipes. I was only making it in a bread maker but I’m sure you can bake it in your oven. Just treat this as any other white loaf which does not require long fermentation. I'll amend this post should I try baking in the oven.

Add all ingredients into the breadmaker in the order in accordance with you breadmaker’s instructions. Chose white setting, crust to your liking and press the start button.

I also like to substitute 100g to 200g white flour with same amount of wholemeal. In this case I add another tbsp of water. Works well as

When ready let it cool at a wire rack for at least 40 minutes before slising.
