
A birthday loaf for a family member from New Zealand
Delicious flatbreads using up sourdough starter. Perfect accompaniment for a BBQ!
Makes 8
300g plain flour
1tbsp sugar
1/2tsp baking powder
1tsp salt
1tbsp oil
60g greek yoghurt
120g sourdough starter
1tbsp water
Melted Butter to brush on breads
Optional spices
Method
Whisk the flour sugar baking powder and salt in a bowl. Then add the oil yoghurt starter and water. Combine until you have a rough dough. Should be nice and soft and not sticky. Add a drop more oil if too dry. Leave for an hour covered with a damp cloth.
Divide into 2 then 4 and then 8 pieces. Roll out each piece until 3-5mm thickness meanwhile leaving the rest covered with a damp cloth.
Heat a pan on a medium/high heat and carefully place onto the dry pan the 1st bread. If BBQing lay directly on the grill. Wait until it starts to bubble up then brush with melted butter and flip to cook the other side. Serve warm with more brushed melted butter.
Add dry spices or chopped herbs at the start for more flavour options.
