Delicious, the most basic and proper sourdough bread recipe!
Follow my recipe, trust me, you can't go wrong!
I assume you have sour dough starter! If you don't have you can make your own or get from a bakery.
Feeding your starter:
200 mg flour + 200 ml water mix it and add your starter
Separate 100 gr of starter put it in a clean jar close the lid (after double the size you are going to put in a fridge
400 gr of starter put it in a clean jar close the lid and leave both until they double the sizes
It will take about 5-6 hours.
After 5 hours 1000 kg flour 640 gr of water knead it, cover it and leave about 1 hour
after 1 house mix your starter with your dough. You don't need to knead much, mostly you strech it.
After 1/2 hour add 20 gr of salt again strceh it
do strecth every an hour repeat that 3 times.
If you have banneton put a muslin on top and make sure to put some rice flour.
divide your dough into 2 pieces give them a nice round shape
Leave them nicely into your banneton, cover it let it set 1 hour in room temprature and then put in your fridge about 12 hours.
After 12 hours preheat your oven to 250 c. Dont gorget to place your cast iron pan inside. after your oven becomes 250 C place your your dough into your pan close, score your dough close the lid, bake it 40 min after 40 min open the lid turn down the temp to 220 and bake until your bread colour nicely brownish colour.
