Quick, simple and oh so yummy! This recipe can easily be halved, but it's best to make the whole batch because they store amazingly well in the freezer.
Ingredients
110g butter, soft
50g cane sugar
50g sugar
1 egg
85g plain flour
125g jumbo oats
1/4 tsp salt
1/2 tsp baking powder
1 tsp vanilla extract
Optional: cranberries, raisins, currants (70g), cinnamon, nuts, sunflower seeds, flax, sesame, chocolate
Method
Mix butter and two kinds of sugar into fluffy mixture. Add egg. In another bowl mix flour, baking powder, salt and cinnamon (optional). Add dry ingredients to butter. Mix it thoroughly. Then add oats, fruits, nuts, seeds. Mix quickly.
Cover baking tray with parchment paper. With wet hands form balls from dough (around 3/4 tbsp each). Bake for 10 min until golden in 190C
