Semolina Sourdough Bread Recipe

This recipe is for delightful Semolina Sourdough Bread containing Sesame and Nigella Seeds and having a lovely nutty flavour with soft texture. It is delicious drizzled with olive oil and is a favourite in our house.

Semolina Sourdough Bread Recipe


  •   250 g Shipton Mill organic Semolina
  •   250 g Shipton Mill organic white flour
  •   300 ml water
  •   60 ml sourdough starter
  •   8g salt
  •   2 teaspoons sesame seeds mixed with 1 teaspoon nigella seeds

Mix the sourdough starter with water then add the semolina. Let rest for 1 hour.

Add the flour and salt. Let rest for 45 minutes.

Stretch and fold 4 times, one hour apart.

Then shape, brush with water, and roll in seed mixture.

Put in banneton and leave in fridge overnight.

Score and put in a cold Dutch oven.

Turn your oven on to 430 deg F / 220 deg C (fan assisted). Insert the Dutch oven, then bake for 50 minutes

Amazing crust and tender chewy crumb! Wow!

Was very intrigued by this recipe, as never tried a bread recipe with semolina and had some that needed to using up. Using semolina in sweet baking and dumplings is very popular where I come from, but never tried in a sourdough bread. Well it was a hit with both husband and kids. Only issue, the bread had too large air holes in the middle, but I suspect it was the cold dutch oven method, which I have not dared to try before so probably didnt get it right. Will definitely bake again, but will preheat the Dutch oven first.
