Mix of white and seeded flour adds extra flour to this loaf
400g White flour
80g Seeded flour
190g mother from starter
Mox water and mother together then add flour. Once mixed add the flour. Leave to rest for 30 mins then add salt
Fold every 30 mins four times or six times then pop into fridge.
Shape in a proving basket and return to fridge for 16 hours.
Cook in cast iron cassorole dish at 250 Deg C 20mins with lid on then 25 without lid
