Satisfying Soda Bread

A very tasty loaf for those who like chewy bread with a malty flavour.

Ingredients – Shipton Mill codes in brackets

500gm Irish Soda Bread flour (406)
250gm Strong White flour (101)
1 teaspoon of salt
4 teaspoons of sugar
2½ tablespoons sunflower oil
2 teaspoons bicarbonate of soda
a handful of each of the following
Malted wheat flakes (305)
5 seed blend (401)
cut malted rye grains (306)
sunflower seeds
about 500ml of milk or 50/50 milk/water


Mix all dry ingredients together and add sunflower oil. Add milk and mix together until a firm dropping consistency. Divide into two and roll each loaf in a liberal amount of white flour, place in pre-greased baking tins and bake at 180C for 40 mins. Makes 2 medium size loaves.

This bread is especially good with cheese and savoury spreads such as pate.
