A wholesome half white half wholemeal sourdough, perfect for kids sandwiches
o Starter – 25g
o Water – 65g
o Shipton Mill 100% Organic Wholemeal – 65g
Late Evening: Mix, cover and let stand overnight
o Shipton Mill Emmer Wholemeal – 250g
o Shipton Mill Cannadian Strong White – 395g
o Water (40C) – 245g
o Milk (40C) – 245g
Next Morning: Mix well, cover and leave to stand for 30 minutes
o Seeds – Poppy + Linseed or 5SeedMix – 60g
o Salt – 12g
Add and knead the dough in a machine for 15 minutes or slap&fold by hand for 10 minutes
Leave the dough to stand for 2-3 hours, depending on temperature
Stretch & fold 4 times in-between, about every 30 minutes
then leave for 1 hour after the last fold
Pre-shape the dough, roll in a 50/50 mix of reice and white flour and put into the pan.
Leave to prove at room temperatre for 1-2 hours until it has risen again by about 1/3

Recipe is for one loaf, you can double the amount to make two at the same time, divide dough into 2 before pre-shaping.
