Quick, simple and oh so yummy! This recipe can easily be halved, but it's best to make the whole batch because they store amazingly well in the freezer.
100g light rye flour
150g wholemeal flour, preferrably fine grade
A pinch of salt
1 large egg
35g unsalted butter
60g sugar
80g honey
30g milk
Spices: 1.5tsp cinnamon, 1/4tsp nutmeg, 1/4 tsp cloves, 1/2 tsp ginger. All ground. For darker biscuits add up to 1Ts of cocoa powder.
Method:
Start by melting butter, honey, sugar and milk on a low heat until all sugar dissolves. (Step 1) Cool it down.
Mix all flours, salt, spices. Add egg and melted and cooled down liuid from step 1. Mix until all well combined. Roll out to about 5mm thickness and cut out shapes.
Bake for 8 minutes in a preheated to 200C oven.
Decorate with any icing to your liking or leave plain as I normally do.
