Pizza Italian style with aubergines

Ingredient

(for 2 medium pizzas)

  • Italian 00 flour             150g
  • Strong white bread flour 150g
  • Yeast                          0.5 tsp
  • Olive oil                       1 tbsp 
  • Salt                            1 tsp
  • Water                       180ml
  • Aubergine                     1
  • capers                       2 tsp
  • Anchovies                  a few
  • Tomato passata          300g
  • Mozzarella for pizza        2
  • Basil                         a few leaves

Method

Slice the aubergine and char-grill  on a frying pan. When ready, put aside on a plate and add few drops of extra virgin olive oil.

Add yeast, flour, olive oil, salt and water into the bread pan and start the pizza dough program to make the dough.

When dough is ready, divide it in 2 equal parts, put them on a lighlty flour baking tray, cover with a kitchen cloth and allow to prove in the oven ( not switched on !) for 3/4 hours, untill doubled in size.

Flatten the dough on a baking trail, add the passata, salt, capers, acnhovies, olive oil and bake in a preheated oven at 220C (gas Mark 7) for 15 minutes.

Remove the pizzas from the oven, add the aubergines and mozzarella, and put them back into the oven until the mozzarella is just melted.

Add a few  basil leaves and enojoy!
