Perfect seeded bread

It's been great fun to experiment with different ratios and I have found the ideal recipe for me. Do you agree? I just love sunflower seeds but it's also good with pumpkin seeds which make it much more chuinky. Finer seeds like chia, sesame and millet are also good - find the one you like best, or just switch it around.

350g Water
11g Salt
300g Organic Three Malts and Sunflower Brown Flour (705)
125g Organic Light Malthouse Flour (301)
125g Organic Spelt Wholemeal Flour (407)
8g Active dried bread yeast
17g Demerara sugar
60g Sunflower spread
50g Sunflower seeds


I use a breadmaker to knead and prove the dough.  Then I knock it back by hand and either make rolls or a single loaf.

Make sure the oven is fully heated to 200C and then bake rolls for 15 minutes or a full loaf for 35 minutes.  Then see if you can wait until it's cool before eating.  I find that it freezes really well too.
