Amazing puff pastry
275g Shipton Mill Organic White Plain Flour #4 (plus extra for rolling)
50g Shipton Mill Organic Wholemeal Flour
250g Unsalted Butter
1/2 tsp Salt
7-10tbsp Ice Cold Water
200g Caster Sugar
Preheat oven to 200 Deg (fan)
Cut the butter into cubes and refrigerate
Mix the both the flours into a bowl with salt and mix.
Then add the refrigerated butter and mix flour whilst flattening/squashing the butter.
Breaking the butter into smaller pieces and continue to mix
Add around 10 tbsp of ice cold water and mix together and bind into a piece.
Wrap in cling film and leave for 2 hours in fridge.
Remove from fridge and roll out, then sprinkle sugar over entire area and fold into thirds just once.
Then refrigerate for 20 mins and repeat process again 3 times.
roll the pastry up in into a roll and refrigerate once more for 15 mins
Remove from fridge and cut into approx 1cm slices
Lay them onto greaseproof line tray.
Bake for 10 mins then remove and turn over and then bake other side until golden brown
