Begin at 7pm. Leave it for night. Form at 8:00 am, bake at 9:15 and at 10am you're bread is ready.
Mix water & flour, leave for 30 mins. Add yeast and salt, mix for 5 min. Leave in warm place and fold 3 times during 1.5 hour. Form ball, move into bowl and leave in room temperature for about 12 hours. Form one big or 2 small bread loafs, leave for 60 min. In meantime preheat dutch oven. Bake 20 mins with lid and 20 mins without lid in 230 ℃.
