A dense rich fruit (or fruit and nuts) cake for all celebrations: Christmas, Easter, birthdays, weddings or anytime because it is so tasty
My Nanna was a confectioner by trade, she was born in 1902.
Ingredients
8oz self-raising flour
10oz mixed fruit
4oz butter
4oz sugar
1/4 pint of water
1 beaten egg
Method
Put fruit, butter, sugar and water in a pan and simmer slowly for 20 minutes then allow to cool.
Add the beaten egg and stir in the flour.
Turn into a lined 6" cake tin.
Bake in a very moderate oven, 300-350 degrees fahrenheit, gas mark 2-3 for around 1.5hrs or until a knife inserted into the centre comes out clean.
I have made this in round tins 7.5" and 8.25" and also in a square 6" tin. It's come out perfect every time! Thank you Nanna.
