Ginger cake made with three types of ginger and a wonderful mix of dark treacle and golden syrup
1 Cup organic rolled oats
2 ripe organic large Bananas (or 3 medium, yes!! lots of bananas to make sweet without sugar)
1 teaspoon baking powder
1/2 cup organic almonds
1 teaspoon organic mixed spice
1 teaspoon pure organic vanilla extract
3 medium organic eggs (substitute with 1 cup of milk free yogurt for vegan and 1/2 teaspoon baking soda)
4 table spoons organic unsalted butter (substitute with organic coconut oil for vegan)
In a food processor powder almonds, oats, baking powder and mixed spice. Take is out in a bowl and in the same processor blend bananas, eggs, butter. Add wet ingredients to dry make sure it is ribbon like consistency (if not then add a teaspoon of milk or water to reach the desired consistency) and bake in muffin tins at 180 C (fan 160C) for 20 mins untill to is golden brown. Decorate with organic chocolate hazelnut spread or organic peanut butter when completly cooled.
The above batter can be used to make awsome pancakes for saturday breakfast.
