Marmite and Cheese Sourdough Bread

30gms of marmite

100gms of starter

280gms of warm water

450 gms of flour ( i blend a good strong white with a malted grain)

66 gms of grated cheese

4gms salt

Blend the Water Marmite and Starter then mix in the flour cheese and Salt till it looks raggy ( i use a dough scraper) , leave for 30 mins, then do 12 stretch and folds , leave for 2 hours then do 6 stretch and folds leave for another 2 hours then do 6 and leave for one hour. Shape and put into proving basket (i usually retard at this point and bake from cold the next morning)
