Malva Pudding

Ingredients

2 large eggs

1 tablespoon apricot jam

180g sugar

150g flour

1/2 teaspoon salt

1 teaspoon baking powder

90ml cup milk

1 teaspoon vinegar

Sauce

200ml Cream

100g butter

100g sugar

90 ml hot water

2 tsp vanilla

Method

  • Preheat oven to 180 degrees Celsius. 
  • Grease an oven-proof dish.
  • Beat the sugar and eggs.
  • Add the jam and mix through
  • Add the melted butter and vinegar to the wet mixture.
  • Mix together the flour, baking soda and salt.
  • Beat this mixture with the milk to the egg mixture
  • Pour into an oven-proof dish and bake for 30 - 45 minutes
  • In a saucepan melt together the ingredients for the sauce, and stir well.
  • Pour it over the pudding as soon as it comes out of the oven.
  • Leave to stand awhile before serving. Serve with vanilla ice cream.
