Ginger cake made with three types of ginger and a wonderful mix of dark treacle and golden syrup
175g white spelt flour
1 1/2 teaspoons baking powder
175g maple syrup
grated zest of lemon
Cream the butter & sugar, add flour & eggs a little at a time. Beat until the whole mixture is light & fluffy. add the rest of the ingredients, and enough milk, if necessary to make dropping constituency.
Put the mixture in a lined loaf tin & bake at 180 for about 30 mins. If desired boil the lemon juice with sugar to taste and pour over the cake
