Ginger cake made with three types of ginger and a wonderful mix of dark treacle and golden syrup

Our thoughts are with the The Royal Family at this incredibly sad time as we join the nation in mourning the loss of our beloved Sovereign.

175g white spelt flour
1 1/2 teaspoons baking powder
175g maple syrup
grated zest of lemon
Cream the butter & sugar, add flour & eggs a little at a time. Beat until the whole mixture is light & fluffy. add the rest of the ingredients, and enough milk, if necessary to make dropping constituency.
Put the mixture in a lined loaf tin & bake at 180 for about 30 mins. If desired boil the lemon juice with sugar to taste and pour over the cake
