Lisa K's Sourdough Sandwich Loaf with added bran

20oz Shipton-mill organic untreated white flour

2tbsp bran

50-55% hydration

5oz sourdough starter

2 TSP Himalayan pink salt

2tbsp milk powder hydrated with 2tbsp water


Put all ingredients together except the milk, mix together and let rest for a few hours under a cover

Add the milk and knead the dough well until it comes together and let cold rise overnight

Knead well and put into a greased tin

Let it rise, score , brush with milk, then bake with another tin acting as a lid  in a preheated oven 200 degrees for 15 minutes, then 180 degrees for 50 minutes

Turn oven off, leave bread in the oven for another15 minutes before taking it out ..take bread out off the tin and let it cool before cutting.. Sandwich whatever take you fancy ! Enjoy
