Light Wholemeal Rolls

Processed in my K-mix


300g wholemeal flour
200g white bread flour
50g wheat bran
300l warm water + a knob of butter
7g instant yeast
1tsp sugar
1/2tsp salt
Small amount of oatmeal to top (optional)


Add water and butter, and then all the dry ingredients on top. Mix on slow (add a dash more water if too dry) for 5 minutes to knead.
Prove until doubled in size, then knock back and form into 9 rolls. Place in a grid on a baking tray, and brush lightly with water and top with oatmeal. Allow to rise again.
Bake in hot oven 220 for 7 minutes and then lower to 140 for another 5. Cool on a wire tray.
