My whole family loves this even those that do not like the usual gluten free flour
100gm chestnut flour
80ml Tigernut milk (I use homemade)
pinch of salt
2 eggs ( I use duck eggs)
1/2 teaspoon of bicarbonate of soda
1/2teaspoon baking powder
coconut oil for frying 1 tablespoon
some maple syrup and fruits for serving
using a whisk mix the eggs and milk
add all dry ingredients
allow to sit for 5 minutes as it might be too runny.
Fry on medium heat with coconut oil
serve with fruits and maple syrup if desired.
