Jamaican Roti Bread (sort of)

Get the oven on at 220 degrees c

Basically this recipe is bread dough with bits in so make a standard sourdough as though you were making bread

For sourdough I use 2 litres plain flour to 1 litre water, mix in a bit of starter then leave for a day or two

The dough will be quite wet and sticky so knead the dough a bit with plenty of flour on the worksurface, this stops it sticking and gets more flour into the mix.

Now mix the following into the dough

1 cup grated chedder cheese

1 grated carrot

1 diced onion

1/2 a diced red pepper

Handful of raisins

salt, pepper, 1 teaspoon mixed herbs

Pull a blob about the size of a fist out and roll it out to about quarter of an inch thick

Put on greasproof paper on a baking tray

Keep doing this until the tray is full

Put the tray in the oven and bake for about 15 minutes, keep an eye on it

Keep it in for a shortish time and it will be soft, like naan, leave it in longer and it will start to brown and be more crispy to eat

Cool on a wire rack and cut into strips
