Loaf made in breadmaker from 100% Heritage Flour This loaf might not be to everyone's taste as it came out a little sunken (sorry, no photo, I've eaten it). But I prefer that to a very risen, spongy sort of loaf. The slightly sunken ones often have the best flavour. I thought it was delicious, the closest I've got recently to bread I used to make from watermill flour.
I used a Panasonic breadmaker, puttiong in the ingredients in the order they specify:
1 1/2 teaspoons active yeast
500g Heritage Flour
1 teaspoon sugar
1 teaspoon salt
360 ml water
Then I used the rapid white setting on the machine. I find this works best with less strong flours.
