An intensely flavoured toasty brown-green bread
50g Hemp flour, 50g Spelt
150g strong white bread flour
250g wholemeal flour
7g dried Yeast
tsp brown sugar
half teaspoon of salt
A glug or tbs Olive oil
Use organic ingredients if you can.
Put on oven to 30C or so for the rising of the dough later
Mix yeast and sugar with warm 300ml water - stir to mix thoroughly and leave while weighing flours into mixing bowl.
Combine flours, salt and yeast mix, while still lumpy, add a glug of olive oil. Combine into a dough. Knead for 12 minutes. Shape and place in oven proof tin. Cover to prevent drying of the dough and place in the warm place. leave to rise for 30-45 mins. Take out of warm place and turn up oven to 200C. Then bake for 35 mins or so.
