Helen Fort's Chocolate Brownies

Oven: Preheat to 180°C

Ingredients

  • 8oz butter
  • 3oz cocoa powder
  • 4oz plain chocolate
  • 4 med-large eggs
  • 1/2 tsp salt
  • 1lb soft brown sugar
  • 4oz self raising flour

Method

  1. Melt butter in pan, stir in cocoa powder and add broken chocolate. Stir until melted
  2. Whisk eggs, sugar and salt until light and frothy
  3. Add chocolate mixture to egg mixture
  4. Fold in flour
  5. Pour into well buttered large roasting pan.
  6. Bake for 30-40mins (depending on size of pan)

My baby group used to meet for coffee once a week to stop us all going mad and this recipie came from one of the mums -Helen Fort, to whom we are all immensely grateful as my kids love them, and now also love making them themselves. My son says we need an electronic version as if we lost our (very battered) hand written copy he would be devastated! Thanks Helen!
