Gluten-free and dairy-free pancakes. It takes less than 15 min to make! For 2 people but can be scaled up proportionally for more people without any issues.
135 g of flour (Shipton Mill multi-purpose gluten-free mix or Shipton Mill gluten-free white bread mix)
1/2 tsp bicarbonates
1/2 tsp xanthan gum (remove if using white bread mix)
1/2 tsp of salt
50 g brown sugar or honey
50 g dairy-free margarine (not melted)
1- Mix all the ingredients with an electric whisk.
2- Warm up a pan at medium heat with a few drops of oil.
3- Add two big spoons of the mixture to the pan and cook about one min on each side.
To make it vegan: replace eggs by eggs substitute (I tried sia seeds, apple puree or mashed banana, it works perfectly!)
