In this recipe I replaced water with elderflower drink, which I made myself: just socked in cold water elderflower blossom for the night, in the morning brought it to the boil and turned gas off, when it culled down it was ready to use. Can be prepared in advance and kept in fridge for few days.
Wheat bread with oatmeal.
Incredibly delicious, delicate and aromatic!
Oatmeal - 50g oatmeal, 130g water, 11g salt. Cook the porridge, add salt, cool down.
Leaven- 15g starter, 60g water, 60g wheat flour 13% protein, 20g whole wheat flour. Fermentation for 8-10 hours.
Dough - 300g wheat flour 13% protein, 75g wheat flour c / z, 180g water, 50g milk, 0.5 tsp. nutmeg, 1 tsp saffron herb. 1 tbsp vodka (optional)
Autolysis 30 min-1 hour.
+ whole leaven
30 min rest
+ whole porridge, 15g honey, 20-25g mustard oil or any vegetable oil.
Fermentation with stretch & fold 6 hours at room temperature and 12-20 hours in the refrigerator, in the basken or bowl olied and dusted up with rise flower. scover it, so the dough do not dry out.
In the moning bring your owen with dutch oven or cast iron pan to 250 C. Take bread out of the fridge fold it on greaseprof paper make scoring and plase it in cast iron pan: bake 15 minutes under the lid and 20-25 minutes without. Cool it on the rack.
