Quick, simple and oh so yummy! This recipe can easily be halved, but it's best to make the whole batch because they store amazingly well in the freezer.
Ingredients
100g Wholemeal flour
100g butter or margarine
100g Demerara sugar
100g desiccated coconut
1tsp baking powder
Pinch salt
1 egg
Method
Set oven at 180c / gas mark 4
Mix flour with baking powder and salt.
Rub fat into flour mixture.
Stir in the sugar and coconut.
Add the egg and mix well to get a soft dough.
Roll out thinly and cut into rounds with cookie cutter.
Place on greased baking sheets and bake for 10-15mins (until golden brown). Cool on wire tray.
These biscuits keep well in an airtight tin.
Makes about 20 biscuits
