Cinnamon Rolls made with sourdough, no dairy, easy to make, great to get the kids helping... for us an unbeatable Saturday morning treat.
makes about 10
200g Untreated Organic White Flour - No.4 (105)
50g Organic 100% Wholemeal Flour (205)
200g White Wheat Sourdough Starter
20g Sugar mix all together in a big bowl, turn it onto your work surface, knead the dough thouroughly for about 5 minutes add
5g Salt and knead again for 5 minutes till it is smooth, make a ball and put it back in your mixing bowl
leave to prove for at least 4 hours, best over night
roll out on floured work surface about 5mm thick, spread
50g Sunflowerspread melted
50g Light brown sugar mix with
roll up and cut into 2.5cm thick slices. Lay the slices well spaced on a baking tray,
leave to prove for another 45 minutes and bake until light golden put on wire rack to cool before puting icing on.
