Ingredients For the Basic White Bread Dough

8 ozs Strong Plain White Flour

Knob of butter (size of walnut)

1 sachet dried yeast

half teaspoon salt

1 teaspoon sugar

75ml warm milk

Ingredients For cinnamon Filling

1 - 1.5 ozs butter

1 tablespoon brown sugar

1 teaspoon of ground cinnamon

Icing Sugar for dusting

Prheat oven to 200°C/Gas 8/fan


Make a basic bread dough and while it is having its first rise, cream all the the cinnamon filling ingredients together (do not include the icing sugar - thisis for dusting the finished bread)

Cinnamon Bread - processAfter the first rise, roll out the bread dough to a 12" square. Spread the cinnamon filling evenly on top of the rolled out bread dough and roll up like a swiss roll, tuck the ends in making sure it is seals, now cut the dough through at 1" intervals, and pull each section in opposit directions. Photo's 1 & 2 should help you with this.

Now leave the roll to rise again for approximately 30/40 minutes when risen bake in hot oven 200 deg. C for approx 20/25 minutes. Leave to cool then dust with icing sugard.

This is delicious with coffee for elevenses and impresses all of my friends.

How can it rise without yeast? Sorry but I've looked through the ingredients for this and can't find it.

sorry about that needs 1 sachet of dried yeast - tried to edit the recipe late yesterday and for some reason the site doesn't let me do this so have emailed Shipton Mill. Do try this recipe, it's so impressive - I always do 600grammes of flour and make 2 so that I have 1 to freeze.
